Veggie egg muffins about to get baked. Got the idea from my friend Sharon, and my family is in LOVE. I put in peppers, green onion, mushroom, & spinach, then season w/ garlic, salt, and pepper. Bake @ 325 about 12 minutes, depending on your oven. Deliciousness abounds, and they’re great reheated in the morning for a grab and go breakfast!
